Gardenia blue pigment is extracted from the fruit of Gardenia jasminoides Rubiaceae. So it's totally natural pigment. The main components are carotenoids crocin. Product is light gray, deep blue powder, soluble in water and ethanol, insoluble in organic solvents. It's stable in different PH value environment.
